Maize is a cost-effective particle that is still a massive favourite. When soaking insure the maize is always completely covered in water as you will discover it takes on an enormous amount of water in rehydration. Try adding other flavours and salt to enhance the maize and leaving it to soak for several days before use.
To prepare soak for 18 hours topping the water up if required and boil for 30 min’s.
